We's hungry!

For dinner, I made zuppa toscana soup from Olive Garden.  
I'm a HUGE fan.  Here is the recipe: 
2 3/4 cup chicken broth 1/2 pound spicy Italian sausage
1/4     cup heavy cream 1/4 teaspoon salt
1         potato 1/4 teaspoon crushed red pepper flakes
2         cups chopped kale        I usually add just a smidge of Italian seasonings

Peel the potatoes and dice them to desired size.  Brown the meat.  Once it is browned place it on several layers of paper towel and let the fat and grease drain off.  While the meat is draining, peel the potatoes and dice to desired size.  Add all ingredients together in a saucepan.  Let the ingredients come to a boil, then reduce to a simmer and cover.  Let simmer for about an hour.   
TIP:  I use milk instead of the cream for less fat, and at Olive Garden they use pork instead of beef.  But, the beef tastes fine.  

I found a recipe in one of those "Top Secret" book of recipes.  Oh, and for all of you doubting, no this is not my mom blogging.  I do cook, and I am a smokin' hot cooker (Pun intended).  While I was cooking I ran into The BIGGEST potato I have ever seen!  Idaho Russet Potatoes from Sam's Club, that's where it's at.  So I figured the best thing to do was make a family of potatoes.  I don't do these ridiculous things everyday, but I do consider doing them.  Today, I did it!!!  When I peeled the potatoes, the sharpie did not come through the skin into the potato.  So, I can assure you thought the skin of a potato protects it very well!  Here are the pictures, and I won't explain them, it would just make me look stupid.

By the way, this recipe doesn't make too much soup. So, if you want leftovers or are serving a lot of people, I would double, maybe triple the recipe.
